- For the Chicken Scampi:
- 1 lb boneless, skinless chicken breasts or tenders
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 cup chicken broth
- 1/4 cup white wine (or additional broth)
- 2 tbsp lemon juice
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- For the Garlic Parmesan Rice:
- 1 cup long grain rice
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 1/4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
Instructions
- Prepare the rice: In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add rice and stir to coat in garlic butter. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 18–20 minutes or until rice is tender and liquid is absorbed.
- Once rice is done, stir in Parmesan cheese and season with salt and pepper. Keep warm.
- Prepare the chicken: Season chicken with salt and pepper. In a large skillet, heat olive oil and butter over medium-high heat.
- Add chicken and cook for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and red pepper flakes (if using). Cook for 1 minute, then add chicken broth, wine (if using), and lemon juice. Simmer for 2–3 minutes to reduce slightly.
- Return chicken to skillet and spoon sauce over it. Let simmer 1–2 minutes to heat through.
- Serve chicken over garlic Parmesan rice and garnish with fresh parsley.
Notes
- You can use chicken tenders for quicker cooking.
- Add a splash of cream to the rice for a richer version.
- Substitute wine with extra broth if preferred.
- Serve with steamed vegetables or a light salad for a complete meal.
