- 1 pound boneless, skinless chicken breasts or tenders, cut into strips
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 4 garlic cloves, minced
- 1/4 cup white wine or chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
Garlic Parmesan Rice:
- 1 cup long grain white rice
- 2 1/4 cups chicken broth
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1/3 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil and 2 tablespoons butter over medium-high heat. Season chicken with salt, pepper, and Italian seasoning, then sauté until golden and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add remaining 2 tablespoons butter and garlic. Cook for 1 minute until fragrant.
- Deglaze the pan with white wine or broth, then add lemon juice. Simmer for 2–3 minutes. Return chicken to the pan, toss to coat, and heat through. Sprinkle with parsley.
- Meanwhile, in a saucepan, melt butter and sauté garlic for 1 minute. Add rice and toast for 2 minutes, stirring.
- Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
- Stir in Parmesan cheese and season with salt and pepper to taste. Serve chicken scampi over the garlic Parmesan rice.

- Use chicken broth instead of wine for a family-friendly version.
- For extra richness, stir a splash of cream into the scampi sauce.
- Add steamed broccoli or sautéed spinach for a complete meal.
