Description

Chicken Scampi with Garlic Parmesan Rice is a flavorful, comforting dish featuring tender sautéed chicken in a buttery garlic-lemon sauce, served over creamy, cheesy Parmesan rice. It’s a restaurant-style dinner you can easily make at home in under 45 minutes.


Ingredients

  • 1 pound boneless, skinless chicken breasts or tenders, cut into strips
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • 1/4 cup white wine or chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley

Garlic Parmesan Rice:

  • 1 cup long grain white rice
  • 2 1/4 cups chicken broth
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil and 2 tablespoons butter over medium-high heat. Season chicken with salt, pepper, and Italian seasoning, then sauté until golden and cooked through, about 6–8 minutes. Remove and set aside.
  2. In the same skillet, add remaining 2 tablespoons butter and garlic. Cook for 1 minute until fragrant.
  3. Deglaze the pan with white wine or broth, then add lemon juice. Simmer for 2–3 minutes. Return chicken to the pan, toss to coat, and heat through. Sprinkle with parsley.
  4. Meanwhile, in a saucepan, melt butter and sauté garlic for 1 minute. Add rice and toast for 2 minutes, stirring.
  5. Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  6. Stir in Parmesan cheese and season with salt and pepper to taste. Serve chicken scampi over the garlic Parmesan rice.

Notes

  • Use chicken broth instead of wine for a family-friendly version.
  • For extra richness, stir a splash of cream into the scampi sauce.
  • Add steamed broccoli or sautéed spinach for a complete meal.
