Description

A fresh, vibrant salad featuring tender chicken, juicy cherry tomatoes, crisp cucumber, and sweet corn, all tossed with mixed greens and a zesty lemon-olive oil dressing.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels, cooked
  • 1 large cucumber, sliced
  • 3 cups mixed salad greens
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Chill a large mixing bowl and salad plates if desired.
  2. In the large bowl, combine the cooked chicken, halved cherry tomatoes, corn kernels, cucumber slices, and mixed salad greens.
