- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1 garlic clove, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 egg, beaten
- 2 tablespoons olive oil, for frying
- Optional: dipping sauce (e.g., ketchup, aioli, or yogurt sauce)
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, parsley, oregano, paprika, salt, and pepper. Add the beaten egg and mix well until all ingredients are fully combined.
- Shape the mixture into small patties (about 2 inches in diameter) using your hands.
- Heat olive oil in a large skillet over medium heat. Once hot, add the rissoles and cook for 3-4 minutes per side, or until golden brown and cooked through, with an internal temperature of 165°F (74°C).
- Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve warm with your choice of dipping sauce.
Notes
- For a gluten-free version, use gluten-free breadcrumbs or crushed gluten-free crackers.
- You can also bake these rissoles in the oven at 375°F (190°C) for 20-25 minutes, flipping halfway through, for a healthier option.
