- 500g boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup fresh pineapple chunks
- 1/2 cup unsalted cashews
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
Instructions
- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
- In a small bowl, whisk together soy sauce, brown sugar, cornstarch, and a splash of water until smooth.
- Add garlic and ginger to the hot oil and sauté until fragrant.
- Cook chicken in batches until browned and nearly cooked through. Set aside.
- In the same pan, add a bit more oil if needed and stir-fry the bell peppers and pineapple for 2 to 3 minutes.
- Return the chicken to the pan, then pour in the sauce and stir continuously until it thickens and coats everything evenly.
- Add toasted cashews, toss to combine, and remove from heat.
- Garnish with green onions or sesame seeds and serve hot over steamed rice.
Notes
- Use fresh pineapple for best flavor, but canned works in a pinch.
- Toast the cashews in a dry skillet for extra crunch.
- Double the sauce if serving with rice to soak up all the flavor.
