- 500 grams ground chicken
- 500 grams potatoes, peeled and cut into chunks
- 1 large egg
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons parsley, chopped
Instructions
- Preheat your oven to 200°C.
- In a mixing bowl, combine ground chicken, egg, breadcrumbs, chopped onion, minced garlic, salt, black pepper, and paprika. Mix gently until just combined.
- Lightly oil a baking dish or tray with a bit of olive oil.
- Shape the mixture into small meatballs and place them on the tray. Arrange the potato chunks around the meatballs and drizzle everything with olive oil.
- Bake for 35 minutes, turning the potatoes and meatballs halfway through, until golden and fully cooked.
- Remove from the oven and sprinkle chopped parsley over the top.
- Serve warm and enjoy.
