Description

Juicy chicken meatballs baked alongside golden roasted potatoes, seasoned perfectly and finished with fresh parsley for a comforting and satisfying meal.


Ingredients

  • 500 grams ground chicken
  • 500 grams potatoes, peeled and cut into chunks
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons parsley, chopped

Instructions

  1. Preheat your oven to 200°C.
  2. In a mixing bowl, combine ground chicken, egg, breadcrumbs, chopped onion, minced garlic, salt, black pepper, and paprika. Mix gently until just combined.
  3. Lightly oil a baking dish or tray with a bit of olive oil.
  4. Shape the mixture into small meatballs and place them on the tray. Arrange the potato chunks around the meatballs and drizzle everything with olive oil.
  5. Bake for 35 minutes, turning the potatoes and meatballs halfway through, until golden and fully cooked.
  6. Remove from the oven and sprinkle chopped parsley over the top.
  7. Serve warm and enjoy.
