- 4 chicken cutlets, pounded thin
- 2 cups fresh mushrooms, sliced
- 3 cloves garlic, minced
- 1 medium yellow onion, finely chopped
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
- Season chicken with salt and pepper, dredge lightly in flour, and shake off excess.
- Sear chicken in the skillet for 3–4 minutes per side until golden, then set aside.
- Add remaining olive oil and butter, then sauté onions and garlic until translucent.
- Add mushrooms and cook until browned and tender.
- Pour in chicken broth, scraping the pan to deglaze. Simmer briefly.
- Add heavy cream and stir. Let the sauce reduce slightly.
- Return chicken to the skillet and simmer for 5–7 minutes, spooning sauce over the chicken.
- Garnish with fresh parsley and serve hot.
