Description

  • 4 chicken cutlets, pounded thin
  • 2 cups fresh mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
  2. Season chicken with salt and pepper, dredge lightly in flour, and shake off excess.
  3. Sear chicken in the skillet for 3–4 minutes per side until golden, then set aside.
  4. Add remaining olive oil and butter, then sauté onions and garlic until translucent.
  5. Add mushrooms and cook until browned and tender.
  6. Pour in chicken broth, scraping the pan to deglaze. Simmer briefly.
  7. Add heavy cream and stir. Let the sauce reduce slightly.
  8. Return chicken to the skillet and simmer for 5–7 minutes, spooning sauce over the chicken.
  9. Garnish with fresh parsley and serve hot.
