- 2 tablespoons olive oil
- 2 cups cooked, shredded boneless skinless chicken breasts
- 1 medium yellow onion, diced
- 2 celery stalks, chopped
- 2 carrots, peeled and chopped
- 3 garlic cloves, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 pound potato gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Place a large Dutch oven or soup pot over medium heat and add the olive oil.
- Sauté the diced onion, celery, and carrots for about 5 minutes until softened.
- Add minced garlic and dried thyme, and cook for another minute until fragrant.
- Sprinkle flour over the vegetables and stir constantly for 1–2 minutes to remove the raw taste.
- Gradually pour in the chicken broth while whisking to avoid lumps.
- Stir in the shredded chicken and gnocchi, then bring to a simmer.
- Let the soup simmer for 5–7 minutes until the gnocchi float and are tender.
- Reduce heat and stir in the heavy cream until warmed through.
- Add fresh spinach and cook for another 1–2 minutes until wilted.
- Season with salt and black pepper to taste, then serve hot.
Notes
- If soup thickens too much after sitting, thin it with extra broth.
- For dairy-free, use full-fat coconut milk instead of cream.
- Add extra vegetables like mushrooms or corn for more texture.
