Description

Chicken Garlic Parmesan Pasta is a creamy and flavorful pasta dish featuring tender chicken, sautéed garlic, fresh spinach, and a rich Parmesan cream sauce tossed with fettuccine. Perfect for a comforting weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 3/4 teaspoon salt, divided
  • 3 tablespoons olive oil, divided
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup white wine
  • 1 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cups packed spinach, chopped
  • 1 lb fettuccine
  • 1/23/4 cup reserved pasta water, if needed
  • 1 tablespoon parsley, chopped

Instructions

  1. Season chicken breasts with 1/2 teaspoon salt. Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  2. Cook chicken for 5-7 minutes per side, until golden brown and cooked through. Remove from skillet and slice.
  3. In the same skillet, add remaining 1 tablespoon olive oil. Sauté onion until translucent, about 3-4 minutes.
  4. Add garlic and red pepper flakes, cooking for 1 minute until fragrant.
  5. Deglaze the pan with white wine, scraping up any browned bits. Allow wine to reduce slightly.
  6. Stir in heavy cream and Italian seasoning. Bring to a gentle simmer.
  7. Add Parmesan cheese and stir until melted and smooth.
  8. Add chopped spinach and cook until wilted.
  9. Cook fettuccine according to package instructions. Reserve 1/2 – 3/4 cup pasta water and drain.
  10. Toss pasta with sauce, adding reserved pasta water as needed to reach desired consistency. Add sliced chicken on top.
  11. Garnish with chopped parsley and additional Parmesan if desired. Serve immediately.

Notes

  • Use freshly grated Parmesan for the best flavor and texture.
  • Adjust red pepper flakes to taste for more or less heat.
  • Reserved pasta water helps to loosen the sauce and coat the pasta evenly.
  • Can substitute fettuccine with linguine, spaghetti, or any preferred pasta.
