  • 1/2 cup red wine vinegar
  • 1/2 chipotle pepper, minced
  • 1 tbsp adobo sauce
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 3 chicken breasts
  • 2 bell peppers, cut into strips
  • 1 onion, thinly sliced
  • 6 cups romaine lettuce, chopped
  • 1 can black beans, drained and rinsed
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup cherry tomatoes, halved
  • 1 lime, cut into wedges (for serving)

Instructions

  1. Make the dressing: In a bowl, whisk together olive oil, red wine vinegar, minced chipotle, adobo sauce, honey, Dijon mustard, oregano, cumin, and garlic powder until smooth. Set aside.
  2. Cook the chicken: Season chicken breasts with salt and pepper. Heat a skillet with a little olive oil over medium-high heat. Cook chicken for 6–7 minutes per side, or until fully cooked (165°F internal temperature). Slice into strips.
  3. Sauté the vegetables: In the same skillet, cook bell peppers and onions until softened and slightly charred, about 5–6 minutes.
  4. Assemble the salad: Place chopped romaine lettuce in a large bowl or platter. Top with sliced chicken, sautéed peppers and onions, black beans, cheddar cheese, and cherry tomatoes.
  5. Serve: Drizzle with honey chipotle dressing and serve with lime wedges.

Notes

  • For extra flavor, marinate the chicken in some of the honey chipotle dressing for 30 minutes before cooking.
  • Swap cheddar cheese for Monterey Jack or cotija for a different twist.
  • This salad is perfect for meal prep—store dressing separately and toss before serving.
