- 1/2 cup red wine vinegar
- 1/2 chipotle pepper, minced
- 1 tbsp adobo sauce
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1 tsp oregano
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 3 chicken breasts
- 2 bell peppers, cut into strips
- 1 onion, thinly sliced
- 6 cups romaine lettuce, chopped
- 1 can black beans, drained and rinsed
- 1/2 cup cheddar cheese, grated
- 1/4 cup cherry tomatoes, halved
- 1 lime, cut into wedges (for serving)
Instructions
- Make the dressing: In a bowl, whisk together olive oil, red wine vinegar, minced chipotle, adobo sauce, honey, Dijon mustard, oregano, cumin, and garlic powder until smooth. Set aside.
- Cook the chicken: Season chicken breasts with salt and pepper. Heat a skillet with a little olive oil over medium-high heat. Cook chicken for 6–7 minutes per side, or until fully cooked (165°F internal temperature). Slice into strips.
- Sauté the vegetables: In the same skillet, cook bell peppers and onions until softened and slightly charred, about 5–6 minutes.
- Assemble the salad: Place chopped romaine lettuce in a large bowl or platter. Top with sliced chicken, sautéed peppers and onions, black beans, cheddar cheese, and cherry tomatoes.
- Serve: Drizzle with honey chipotle dressing and serve with lime wedges.
Notes
- For extra flavor, marinate the chicken in some of the honey chipotle dressing for 30 minutes before cooking.
- Swap cheddar cheese for Monterey Jack or cotija for a different twist.
- This salad is perfect for meal prep—store dressing separately and toss before serving.
