Description
Chicken Fajita Melts are a fusion of sizzling fajita flavors and cheesy grilled sandwiches, featuring seasoned chicken, sautéed peppers and onions, and melted cheese on toasted bread.

- 2 cups cooked chicken breast, sliced or shredded
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded Mexican cheese blend or cheddar
- 4 slices sourdough or sandwich bread
- 2 tbsp butter, softened
Instructions
- Heat olive oil in a skillet over medium heat. Add peppers and onions, cooking until softened, about 5 minutes.
- Add the cooked chicken, chili powder, cumin, paprika, salt, and pepper. Stir and cook for another 2-3 minutes until everything is heated through and well combined. Remove from heat.
- Butter one side of each bread slice. Place two slices, butter-side down, on a skillet or griddle over medium heat.
- Top each with a generous layer of the chicken fajita mixture and shredded cheese. Place the remaining bread slices on top, butter-side up.
- Cook the sandwiches for 3-4 minutes per side, or until the bread is golden and the cheese is melted.
- Remove from heat, slice in half, and serve hot.
Notes
- Use pepper jack cheese for an extra spicy kick.
- Serve with salsa, sour cream, or guacamole for dipping.
- You can substitute the bread with tortillas and make quesadillas instead.
