A creamy, skillet-seared classic featuring juicy chicken breasts in a rich garlic, mustard, and cream sauce. Chicken Diane is quick, comforting, and absolutely packed with flavor.

- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 medium shallot, finely chopped
- 2 teaspoons Dijon mustard
- 3/4 cup low-sodium chicken broth
- 1/4 cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 2 tablespoons chopped fresh parsley
- Salt and black pepper, to taste
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Season chicken breasts with salt and pepper on both sides.
- Add chicken to the skillet. Cook for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium. In the same skillet, melt butter and sauté shallots and garlic until softened.
- Stir in Dijon mustard, Worcestershire sauce, and lemon juice.
- Pour in chicken broth and simmer for 2–3 minutes.
- Add cream and simmer another 2 minutes until sauce slightly thickens.
- Return chicken to the skillet and spoon sauce over it. Simmer for another minute.
- Garnish with fresh parsley and serve hot.
Notes
- Pound chicken evenly for consistent cooking.
- Use low-sodium broth to control salt levels.
- Don’t boil the cream to avoid splitting.
- Double the sauce if serving over pasta or rice.
