Description

Flaky, golden pastry filled with a savory and mildly spiced chicken curry mixture. These chicken curry puffs make a perfect snack, appetizer, or party treat inspired by Southeast Asian and Indian flavors.


Ingredients

  • 1 tbsp oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/2 lb (225g) ground chicken or finely chopped cooked chicken
  • 1 tbsp curry powder
  • 1/4 tsp turmeric
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup diced potatoes, cooked
  • 1/4 cup frozen peas
  • 2 tbsp chopped fresh cilantro (optional)
  • 1 tbsp soy sauce or oyster sauce (optional for extra umami)
  • 1 package frozen puff pastry sheets, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat oil in a skillet over medium heat. Add onion and sauté until translucent, about 3 minutes. Add garlic and ginger and cook for another 1 minute.
  3. Add ground chicken to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in curry powder, turmeric, salt, pepper, and soy sauce (if using). Cook for 1–2 minutes until fragrant.
  5. Add cooked diced potatoes and peas. Mix well and cook for another 2 minutes. Stir in cilantro if using. Let mixture cool slightly.
  6. Roll out puff pastry sheets and cut into squares (about 4–5 inches each).
  7. Place a spoonful of the filling in the center of each square. Fold over to form triangles or rectangles and press edges to seal (use a fork for a decorative edge).
  8. Brush the tops with beaten egg for a golden finish.
  9. Bake for 18–22 minutes, or until puffs are golden brown and flaky. Serve warm or at room temperature.

Notes

  • Make the filling ahead of time and refrigerate for quick assembly.
  • Freeze unbaked puffs and bake from frozen, adding a few extra minutes to baking time.
  • For a vegetarian version, substitute chickpeas or tofu for the chicken.
