Description

  • 4 boneless skinless chicken breasts, pounded thin
  • 4 thin slices ham
  • 4 slices Swiss cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 teaspoon paprika
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup whole milk
  • 1 cup Swiss cheese, freshly grated
  • 2 tablespoons all-purpose flour, for sauce
  • Salt and black pepper, to taste

Instructions

  1. Pound chicken: Place each chicken breast between parchment sheets and pound to an even 1/4 inch thickness.
  2. Layer and roll: Lay a slice of ham and a slice of Swiss over each breast, roll up tightly, and secure with toothpicks.
  3. Chill: Refrigerate the rolls for 15 minutes to help them hold their shape.
  4. Breading: Set up flour, beaten eggs, and breadcrumbs mixed with paprika. Dredge rolls in flour, dip in egg, then coat evenly in breadcrumbs.
  5. Sear: Heat butter and olive oil in a skillet over medium heat. Sear rolls on all sides until golden, 2 to 3 minutes per side.
  6. Bake: Transfer to a lightly greased baking dish and bake at 375°F (190°C) for 20 to 25 minutes, until the centers reach 165°F (74°C).
  7. Swiss sauce: In a saucepan, melt 2 tablespoons butter over medium heat, whisk in 2 tablespoons flour, cook 1 minute, then slowly whisk in 1 cup milk. Simmer until thickened, remove from heat, and stir in 1 cup grated Swiss. Season with salt and pepper.
  8. Serve: Rest chicken 5 minutes, remove toothpicks, slice, and spoon warm Swiss cheese sauce over the top.
