Description

Chicken Bruschetta Casserole is a flavorful, comforting dish that combines juicy chicken, a fresh tomato bruschetta topping, and a crispy garlic-butter breadcrumb layer. It’s a perfect all-in-one meal that’s easy to prepare and packed with Italian-inspired flavors.

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 3 tablespoons butter, melted
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a medium bowl, mix the cherry tomatoes, red onion, minced garlic, basil, balsamic vinegar, olive oil, salt, and pepper to make the bruschetta topping.
  3. Arrange the chicken breasts in the prepared baking dish. Season with salt and pepper.
  4. Top the chicken evenly with the bruschetta mixture.
  5. Sprinkle shredded mozzarella and Parmesan cheese over the top.
  6. In a small bowl, mix the breadcrumbs with melted butter. Sprinkle the breadcrumb mixture over the cheese layer.
  7. Bake for 25–30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the topping is golden and crispy.
  8. Garnish with additional fresh basil before serving, if desired.
