- 2 cups cherry tomatoes, halved

- 1/4 cup fresh basil, chopped

- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup seasoned breadcrumbs
- 3 tablespoons butter, melted
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a medium bowl, mix the cherry tomatoes, red onion, minced garlic, basil, balsamic vinegar, olive oil, salt, and pepper to make the bruschetta topping.
- Arrange the chicken breasts in the prepared baking dish. Season with salt and pepper.
- Top the chicken evenly with the bruschetta mixture.
- Sprinkle shredded mozzarella and Parmesan cheese over the top.
- In a small bowl, mix the breadcrumbs with melted butter. Sprinkle the breadcrumb mixture over the cheese layer.
- Bake for 25–30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the topping is golden and crispy.
- Garnish with additional fresh basil before serving, if desired.
