Description

  • 4 medium russet potatoes, peeled and cut into cubes
  • 2 cups cooked chicken pieces
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 3 garlic cloves, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed potatoes with olive oil, salt, and black pepper in a mixing bowl until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast the potatoes for about 25 minutes until golden and tender.
