- 1 (8 oz) package cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- 1 egg yolk
- 1/2 cup cherry pie filling (or homemade cherry compote)
- 1 egg (for egg wash)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry slightly and place on the prepared baking sheet. Use a knife to score a 1/2-inch border around the edges without cutting all the way through.
- In a bowl, beat cream cheese, sugar, vanilla, and egg yolk until smooth and creamy.
- Spread the cream cheese mixture inside the scored border of the pastry.
- Spoon cherry pie filling evenly over the cream cheese mixture.
- Brush the pastry border with beaten egg.
- Bake for 18–22 minutes, or until the pastry is puffed and golden brown.
- Let cool slightly before dusting with powdered sugar and slicing.
Notes
- Use homemade cherry compote for a more natural flavor.
- This pie is best served the day it’s made, but leftovers can be stored in the refrigerator for up to 2 days.
