Description

Cheesy Velveeta Tortellini with Italian Beef Marinara is a rich, comforting pasta dish featuring tender cheese-filled tortellini smothered in a savory ground beef marinara sauce and creamy Velveeta cheese. It’s a family favorite perfect for cozy weeknight dinners.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 10 oz Velveeta cheese, cubed
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 20 oz refrigerated cheese tortellini
  • Fresh parsley, chopped (optional, for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a boil and cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil and cook ground beef until browned. Drain excess fat.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
  5. Add cubed Velveeta cheese to the sauce and stir until completely melted and creamy.
  6. Add cooked tortellini to the skillet and toss gently to coat in the cheesy beef marinara sauce.
  7. Garnish with fresh parsley and serve with grated Parmesan, if desired.

Notes

  • Use spicy Italian sausage instead of ground beef for extra flavor.
  • Velveeta melts best when added gradually and stirred continuously.
  • Add a handful of spinach or mushrooms for a veggie boost.
  • Leftovers reheat well and make a great next-day lunch.
