Description

Cheesy taco meatball subs combine juicy, taco-seasoned meatballs with melty cheese and a zesty tomato sauce, all tucked inside a toasted hoagie roll for the ultimate comfort food fusion.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic powder
  • 1 can (15 ounces) crushed tomatoes
  • 1/2 medium onion, chopped
  • 1 tablespoon olive oil
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, milk, taco seasoning, and garlic powder until combined.
  3. Form into 1 1/2 inch meatballs and place on baking sheet.
  4. Bake for 20 minutes until browned and cooked through.
  5. In a skillet, heat olive oil and sauté chopped onion until soft.
  6. Add crushed tomatoes and remaining taco seasoning, simmer for 10 minutes.
  7. Add cooked meatballs to sauce and coat well.
  8. Slice hoagie rolls lengthwise without cutting all the way through.
  9. Fill rolls with meatballs and sauce, top with cheddar and mozzarella cheese.
  10. Place subs in a baking dish and bake at 375°F (190°C) for 8–10 minutes until cheese is melted and bubbly.
  11. Broil for 2 minutes for a golden top if desired.
  12. Garnish with fresh cilantro and serve warm.

Notes

  • Toast rolls slightly before filling to avoid sogginess.
  • Use a mix of cheddar and mozzarella for the best melt.
  • Double the meatball recipe and freeze extras for later meals.
