Description

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 2 tablespoons taco seasoning
- 1 teaspoon garlic powder
- 1 can (15 ounces) crushed tomatoes
- 1/2 medium onion, chopped
- 1 tablespoon olive oil
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 hoagie rolls
- Fresh cilantro (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, taco seasoning, and garlic powder until combined.
- Form into 1 1/2 inch meatballs and place on baking sheet.
- Bake for 20 minutes until browned and cooked through.
- In a skillet, heat olive oil and sauté chopped onion until soft.
- Add crushed tomatoes and remaining taco seasoning, simmer for 10 minutes.
- Add cooked meatballs to sauce and coat well.
- Slice hoagie rolls lengthwise without cutting all the way through.
- Fill rolls with meatballs and sauce, top with cheddar and mozzarella cheese.
- Place subs in a baking dish and bake at 375°F (190°C) for 8–10 minutes until cheese is melted and bubbly.
- Broil for 2 minutes for a golden top if desired.
- Garnish with fresh cilantro and serve warm.
Notes
- Toast rolls slightly before filling to avoid sogginess.
- Use a mix of cheddar and mozzarella for the best melt.
- Double the meatball recipe and freeze extras for later meals.
