Cheesy Mashed Potato Puffs are crispy on the outside and creamy on the inside — made from leftover mashed potatoes, cheddar, and herbs. They make a perfect side dish or savory snack!

- 2 cups chilled mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup Parmesan cheese
- 1 large egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives
- Nonstick cooking spray or muffin tin
Instructions
- Preheat oven to 400°F (200°C) and spray muffin tin with nonstick spray.
- In a large bowl, combine mashed potatoes, cheddar, Parmesan, chives, garlic powder, black pepper, and beaten egg.
- Spoon mixture into muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes until tops are crispy and puffs are set.
- Remove from oven and let cool slightly before serving.
Notes
- Add diced ham or crispy bacon for a savory twist.
- Pair with sour cream or ranch for dipping.
