Description

Cheesy Mashed Potato Puffs are crispy on the outside and creamy on the inside — made from leftover mashed potatoes, cheddar, and herbs. They make a perfect side dish or savory snack!


Ingredients

  • 2 cups chilled mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives
  • Nonstick cooking spray or muffin tin

Instructions

  1. Preheat oven to 400°F (200°C) and spray muffin tin with nonstick spray.
  2. In a large bowl, combine mashed potatoes, cheddar, Parmesan, chives, garlic powder, black pepper, and beaten egg.
  3. Spoon mixture into muffin cups, filling each about 3/4 full.
  4. Bake for 20-25 minutes until tops are crispy and puffs are set.
  5. Remove from oven and let cool slightly before serving.
