Cheesy Mashed Potato Puffs are crispy on the outside, soft and cheesy on the inside, and absolutely irresistible! These bite-sized treats are the perfect way to use up leftover mashed potatoes — ideal for appetizers, brunch, or snacking any time of day.

- 2 cups cold mashed potatoes
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- Nonstick cooking spray
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin tin or spray with nonstick cooking spray.
- In a large bowl, mix together mashed potatoes, cheddar cheese, eggs, Parmesan, green onions, garlic powder, salt, and pepper until well combined.
- Spoon mixture evenly into the muffin cups, filling each about 3/4 full and gently packing down.
- Bake for 25–30 minutes, or until the tops are golden brown and slightly crispy.
- Let cool in the pan for 5 minutes before removing. Serve warm.

- Use leftover mashed potatoes for quick prep.
