Cheesy Garlic Zucchini Steaks are thick-cut zucchini slices roasted to tender perfection, smothered in melted mozzarella, Parmesan, and garlic butter. This low-carb, flavorful side dish is easy, cheesy, and perfect for any meal or even as a healthy snack.
Ingredients

- 2 large zucchinis, sliced lengthwise into 1/2-inch thick steaks
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place zucchini steaks on the baking sheet and brush with olive oil.
- In a small bowl, mix minced garlic, salt, pepper, and Italian seasoning. Sprinkle over the zucchini evenly.
- Roast for 15 minutes until tender.
- Remove from oven, top with mozzarella and Parmesan, and return to oven for another 5–7 minutes or until cheese is melted and bubbly.
- Garnish with chopped parsley and serve warm.
Notes
- Try adding crushed red pepper for a little heat.
- Great as a side for grilled meats or pasta dishes.
- Use yellow squash for a colorful twist.
