Description

Cheesy Garlic Zucchini Steaks are thick-cut zucchini slices roasted to tender perfection, smothered in melted mozzarella, Parmesan, and garlic butter. This low-carb, flavorful side dish is easy, cheesy, and perfect for any meal or even as a healthy snack.


Ingredients

  • 2 large zucchinis, sliced lengthwise into 1/2-inch thick steaks
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place zucchini steaks on the baking sheet and brush with olive oil.
  3. In a small bowl, mix minced garlic, salt, pepper, and Italian seasoning. Sprinkle over the zucchini evenly.
  4. Roast for 15 minutes until tender.
  5. Remove from oven, top with mozzarella and Parmesan, and return to oven for another 5–7 minutes or until cheese is melted and bubbly.
  6. Garnish with chopped parsley and serve warm.

Notes

  • Try adding crushed red pepper for a little heat.
  • Great as a side for grilled meats or pasta dishes.
  • Use yellow squash for a colorful twist.
