- 1 packet taco seasoning mix
- 1 can (10 oz) red enchilada sauce
- 1/2 cup salsa
- 1/2 cup water
- 1 package (20 oz) refrigerated cheese tortellini
- 1 cup shredded Mexican blend cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish (optional)
Instructions
- In a large skillet over medium heat, heat the olive oil and brown the ground beef until fully cooked. Drain excess fat if needed.
- Stir in taco seasoning and cook for 1 minute.
- Add enchilada sauce, salsa, and water. Stir well to combine.
- Stir in the tortellini and bring the mixture to a simmer.
- Cover and cook for 8–10 minutes, or until the tortellini are tender and heated through.
- Uncover and sprinkle shredded cheese over the top. Cover again and let sit for 2–3 minutes until the cheese is melted.
- Garnish with chopped cilantro or green onions if desired. Serve hot.
