- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups diced potatoes (Yukon Gold or Russet)
- 1/2 cup tomato sauce or ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1 package (5.2 oz) Boursin garlic & fine herbs cheese
- 1/2 cup shredded cheddar or mozzarella cheese
- 1 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden and tender, about 10–12 minutes. Remove and set aside.
- In the same skillet, cook ground beef until browned. Drain excess fat if needed.
- Add chopped onion and garlic, and sauté until soft and fragrant, about 3 minutes.
- Stir in tomato sauce, Worcestershire sauce, Dijon mustard, salt, and pepper. Simmer for 5 minutes.
- Return the cooked potatoes to the skillet and mix gently.
- Add Boursin cheese and stir until melted and combined with the mixture.
- Sprinkle shredded cheese on top and cover for 2–3 minutes until melted.
- Garnish with parsley if desired and serve warm straight from the skillet.
