Description

Cheesy Boursin Sloppy Joe Potato Skillet is a rich and satisfying one-pan meal that combines savory ground beef, creamy Boursin cheese, and tender potatoes in a skillet. This comforting dish puts a gourmet twist on classic Sloppy Joes, making it perfect for weeknight dinners or casual gatherings.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups diced potatoes (Yukon Gold or Russet)
  • 1/2 cup tomato sauce or ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 1 package (5.2 oz) Boursin garlic & fine herbs cheese
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden and tender, about 10–12 minutes. Remove and set aside.
  2. In the same skillet, cook ground beef until browned. Drain excess fat if needed.
  3. Add chopped onion and garlic, and sauté until soft and fragrant, about 3 minutes.
  4. Stir in tomato sauce, Worcestershire sauce, Dijon mustard, salt, and pepper. Simmer for 5 minutes.
  5. Return the cooked potatoes to the skillet and mix gently.
  6. Add Boursin cheese and stir until melted and combined with the mixture.
  7. Sprinkle shredded cheese on top and cover for 2–3 minutes until melted.
  8. Garnish with parsley if desired and serve warm straight from the skillet.

Notes

  • Swap ground beef for ground turkey or plant-based meat for a lighter or vegetarian version.
  • Add bell peppers or mushrooms for extra vegetables.
  • This dish can be made ahead and reheated for quick meals throughout the week.
