- 2.5 pounds russet potatoes, peeled and thinly sliced
- 2 cups shredded sharp cheddar cheese
- 1 cup whole milk
- 1 cup heavy cream
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- 1.5 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a saucepan over medium heat, melt butter. Add garlic and onion, sauté until soft.
- Stir in flour and cook for 1–2 minutes, whisking constantly. Slowly add milk and cream while whisking.
- Bring to a simmer, then add half the cheese, salt, and pepper. Stir until smooth and melted. Remove from heat.
- Layer half the potato slices in the dish. Pour over half the cheese sauce. Repeat with remaining potatoes and sauce. Sprinkle remaining cheese on top.
- Bake uncovered for 50–60 minutes until bubbly and golden. Potatoes should be fork-tender.
- Let rest for 10–15 minutes before serving. Garnish with herbs if desired.
