Description

Crispy baked potato skins loaded with tender shaved steak, sautéed peppers and onions, and melty cheese. The ultimate game-day or party snack that’s bursting with flavor and texture.


Ingredients

  • 4 large russet potatoes
  • 1 pound shaved beef steak
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1 ½ cups shredded provolone or mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • ½ teaspoon garlic powder
  • Fresh parsley, optional for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Scrub and dry the potatoes. Pierce each a few times with a fork and bake directly on the oven rack for 45 minutes or until tender. Let cool slightly.
  3. Meanwhile, in a skillet over medium-high heat, heat 1 tablespoon olive oil. Sauté onions and peppers until softened and caramelized, about 8 minutes. Remove from pan and set aside.
  4. In the same pan, cook shaved steak until browned and cooked through. Season with salt, pepper, and garlic powder.
  5. Slice baked potatoes in half lengthwise and scoop out the insides, leaving a thin layer inside the skins.
  6. Brush the potato skins with remaining olive oil and place skin-side down on the baking sheet.
  7. Fill each skin with steak, then top with sautéed peppers and onions. Sprinkle with shredded cheese.
  8. Bake for 10–12 minutes until cheese is melted. For a golden top, broil for 2–3 minutes at the end.
  9. Garnish with fresh parsley if desired and serve hot.
