Description

This Cheeseburger Frittata takes all the flavors of a juicy cheeseburger and transforms them into a hearty, cheesy, and protein-packed breakfast (or dinner!). With seasoned beef, onions, eggs, and plenty of melty cheese, it’s a low-carb, satisfying dish that’s perfect for meal prep or weekend brunch.

Beef + Onion

  • 1 pound lean ground beef or turkey
  • ½ medium white or yellow onion, diced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

To Finish

  • 8 large eggs
  • ½ cup milk
  • ¾ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground mustard
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ¼ cup grated parmesan cheese
  • 1 medium tomato, diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, cook the ground beef (or turkey) with diced onion, salt, and pepper over medium heat until meat is browned and onions are softened. Drain excess grease if necessary.
  3. In a large bowl, whisk together the eggs, milk, salt, garlic powder, onion powder, ground mustard, cayenne pepper, and black pepper.
  4. Pour the egg mixture over the cooked beef and onions in the skillet. Stir gently to distribute evenly.
  5. Sprinkle cheddar and parmesan cheeses evenly over the top.
  6. Scatter diced tomato over the surface.
  7. Transfer the skillet to the oven and bake for 25–30 minutes, or until eggs are set and the top is golden and bubbly.
  8. Let cool slightly before slicing and serving warm.

Notes

  • For extra cheeseburger flavor, top slices with a drizzle of ketchup or mustard.
