Description

A hearty and comforting soup made with cheese-filled tortellini, smoky kielbasa, and fresh vegetables simmered in a flavorful broth. Perfect for a cozy weeknight meal.


Ingredients

  • 1 tbsp olive oil
  • 14 oz kielbasa, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 10 oz refrigerated cheese tortellini
  • 2 cups fresh spinach (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add kielbasa and cook until browned, about 4–5 minutes. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  3. Pour in chicken broth and diced tomatoes. Stir in basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add tortellini and cooked kielbasa. Simmer for 5–7 minutes or until tortellini is tender.
  6. Stir in spinach and cook just until wilted, about 1 minute.
  7. Serve hot, topped with grated Parmesan cheese if desired.

Notes

  • Use turkey kielbasa for a lighter option.
  • Substitute kale or Swiss chard for spinach if preferred.
  • Soup can be stored in the refrigerator for up to 3 days.
