Description
A hearty and comforting soup made with cheese-filled tortellini, smoky kielbasa, and fresh vegetables simmered in a flavorful broth. Perfect for a cozy weeknight meal.

- 1 tbsp olive oil
- 14 oz kielbasa, sliced into rounds
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 10 oz refrigerated cheese tortellini
- 2 cups fresh spinach (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add kielbasa and cook until browned, about 4–5 minutes. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
- Pour in chicken broth and diced tomatoes. Stir in basil, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add tortellini and cooked kielbasa. Simmer for 5–7 minutes or until tortellini is tender.
- Stir in spinach and cook just until wilted, about 1 minute.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
- Use turkey kielbasa for a lighter option.
- Substitute kale or Swiss chard for spinach if preferred.
- Soup can be stored in the refrigerator for up to 3 days.
