- 400 g (1 lb) potatoes, peeled and cut into small cubes
- 30 g (1 oz) salted butter
- 2 large onions, peeled and finely chopped
- 125 g (4.5 oz) strong cheddar cheese, grated
- 375 g (12 oz) puff pastry
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Boil the potatoes in salted water for 8–10 minutes, until just tender. Drain and set aside.
- In a skillet, melt the butter and cook the onions gently until soft and golden, about 10 minutes.
- In a bowl, combine the cooked potatoes, onions, and grated cheddar. Season generously with salt and black pepper.
- Roll out the puff pastry and cut into 6–8 equal squares or circles. Spoon filling onto one half, fold over, and seal edges with a fork.
- Transfer pasties to the baking sheet, brush tops with milk or egg wash if desired.
- Bake for 20–25 minutes until puffed and golden brown. Serve warm.
Notes
- You can add a pinch of dried thyme or mustard powder to the filling for extra flavor.
- These pasties taste great hot from the oven or at room temperature.
- They can be frozen before baking—just bake from frozen, adding 5–10 minutes to the cooking time.
