Description

Delicate whipped cream clouds infused with cardamom and spiced carrot, layered with a luscious mascarpone swirl—a light, airy dessert that melts on the tongue and delights with every bite.


Ingredients

  • 1 cup carrot purée (from steamed or roasted carrots)
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons honey or maple syrup
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup mascarpone cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: crushed pistachios or toasted coconut for garnish

Instructions

  1. In a bowl, combine carrot purée, cardamom, and honey. Mix until smooth and chill.
  2. In another bowl, whip heavy cream to stiff peaks. Set aside.
  3. In a separate bowl, whisk mascarpone, powdered sugar, vanilla, and salt until smooth.
  4. Fold half the whipped cream into the carrot mixture gently.
  5. Fold the remaining whipped cream into the mascarpone to create the swirl.
  6. Layer both mixtures alternately into serving glasses or bowls for a marbled effect.
  7. Chill for at least 1 hour before serving. Garnish with crushed pistachios or coconut if desired.
