- 2 tablespoons honey or maple syrup
- 1 cup heavy whipping cream, chilled
- 1/2 cup mascarpone cheese, softened

- 1/2 teaspoon vanilla extract
- Pinch of salt

Instructions
- In a bowl, combine carrot purée, cardamom, and honey. Mix until smooth and chill.
- In another bowl, whip heavy cream to stiff peaks. Set aside.
- In a separate bowl, whisk mascarpone, powdered sugar, vanilla, and salt until smooth.
- Fold half the whipped cream into the carrot mixture gently.
- Fold the remaining whipped cream into the mascarpone to create the swirl.
- Layer both mixtures alternately into serving glasses or bowls for a marbled effect.
- Chill for at least 1 hour before serving. Garnish with crushed pistachios or coconut if desired.
