- 2 flatbreads (like naan)
- 2 large yellow onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup basil pesto
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 tablespoons toasted pine nuts
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 425°F and place a baking sheet inside to heat.
- In a large skillet over medium-low heat, add olive oil and sliced onions. Cook for 20-25 minutes, stirring occasionally, until onions are deep golden and soft.
- Add balsamic vinegar, salt, and pepper to the onions in the final 5 minutes. Stir well and remove from heat.
- Carefully remove the preheated baking sheet from the oven and place flatbreads on it. Lightly brush the tops with olive oil.
- Spread a thin layer of pesto over each flatbread.
- Top evenly with caramelized onions, mozzarella, parmesan, and toasted pine nuts.
- Bake for 10-12 minutes until the cheese is bubbly and the edges of the flatbread are crisp.
- Remove from oven and garnish with fresh basil leaves.
- Slice and serve warm.
