Description

A quick and flavorful flatbread pizza topped with caramelized onions, pesto, melty mozzarella, toasted pine nuts, and fresh basil. Perfect for a cozy dinner or a light party appetizer.


Ingredients

  • 2 flatbreads (like naan)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup basil pesto
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons toasted pine nuts
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 425°F and place a baking sheet inside to heat.
  2. In a large skillet over medium-low heat, add olive oil and sliced onions. Cook for 20-25 minutes, stirring occasionally, until onions are deep golden and soft.
  3. Add balsamic vinegar, salt, and pepper to the onions in the final 5 minutes. Stir well and remove from heat.
  4. Carefully remove the preheated baking sheet from the oven and place flatbreads on it. Lightly brush the tops with olive oil.
  5. Spread a thin layer of pesto over each flatbread.
  6. Top evenly with caramelized onions, mozzarella, parmesan, and toasted pine nuts.
  7. Bake for 10-12 minutes until the cheese is bubbly and the edges of the flatbread are crisp.
  8. Remove from oven and garnish with fresh basil leaves.
  9. Slice and serve warm.
