- 2 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1 tablespoon fresh chives, finely chopped
Instructions
- Heat a heavy-bottomed skillet over medium heat.
- Add butter and olive oil. Once melted, stir in the sliced onions with a pinch of salt.
- Cook the onions slowly for 25 to 35 minutes, stirring frequently, until deeply golden and caramelized.
- Let the onions cool completely.
- In a mixing bowl, combine sour cream, mayonnaise, minced garlic, and black pepper.
- Fold in the cooled onions and mix until well combined.
- Stir in chopped chives and adjust seasoning as needed.
- Chill for at least 1 hour before serving. Serve with chips, crackers, or fresh veggies.
Notes
- Let the onions cool before mixing to prevent the dip from becoming runny.
