Description

A fresh and satisfying Caprese Salad with Grilled Chicken featuring juicy grilled chicken slices layered with ripe tomatoes, creamy mozzarella, fragrant basil, and finished with olive oil and balsamic glaze.


Ingredients

  • 2 large boneless skinless chicken breasts, about 450 grams total
  • 3 medium ripe tomatoes, about 500 grams, sliced thick
  • 225 grams fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves, loosely packed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground

Instructions

  1. Preheat a grill pan or outdoor grill over medium high heat.
  2. In a small bowl, mix 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Brush evenly over the chicken breasts.
  3. Lightly brush the grill surface with the remaining 1 tablespoon olive oil to prevent sticking.
  4. Grill the chicken for 6 to 7 minutes per side, until the internal temperature reaches 75 degrees Celsius. Remove and let rest for 5 minutes, then slice.
  5. Slice the tomatoes and mozzarella into thick rounds.
  6. On a large serving plate, alternate slices of tomato, mozzarella, and grilled chicken. Tuck fresh basil leaves between the layers.
  7. Drizzle balsamic glaze evenly over the top and sprinkle with the remaining salt and black pepper.
  8. Serve immediately while the chicken is slightly warm and the cheese is cool and creamy.
