Description

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 cup brown rice (dry)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 handful fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato cubes with olive oil, Cajun seasoning, salt, black pepper, garlic powder, and paprika.
  3. Spread seasoned potatoes on the baking sheet in a single layer and roast for 25 to 30 minutes, flipping halfway through.
  4. Cook brown rice according to package instructions while potatoes roast.
  5. Let both sweet potatoes and rice rest for 5 minutes after cooking.
  6. Fluff the rice with a fork and season with lime juice and salt. Mix in green onions and cilantro.
  7. Assemble bowls with rice on the bottom and roasted sweet potatoes on top. Garnish with herbs and serve warm.
