- 4 large boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped sun-dried tomatoes
- 1 small green bell pepper, diced
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 375°F and heat a skillet over medium-high heat.
- In a bowl, mix together the mozzarella cheese, sun-dried tomatoes, green bell pepper, garlic powder, salt, and pepper.
- Lightly oil an oven-safe skillet or baking dish.
- Butterfly each chicken breast, season inside and out with Cajun seasoning, and stuff with the prepared filling. Secure with toothpicks.
- Sear the stuffed chicken in the hot skillet for 2–3 minutes per side until golden.
- Transfer the skillet to the oven and bake for 20 minutes or until the chicken reaches an internal temperature of 165°F.
- Let rest for 5 minutes before removing toothpicks and serving.
Notes
- Don’t overstuff the chicken to avoid leakage.
- Secure the sides well with toothpicks to keep the filling intact during cooking.
