- 1 lb Cajun sausage, crumbled
- 2 medium potatoes, peeled and diced
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup green onions, chopped
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large skillet, cook the crumbled Cajun sausage over medium heat until browned and cooked through. Remove from heat and set aside.
- In a separate pot, boil the diced potatoes until tender, about 8-10 minutes. Drain and mash them with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- Stir the cooked sausage into the mashed potatoes, then fold in the shredded cheddar cheese and green onions until well combined.
- Roll out the puff pastry on a lightly floured surface and cut it into squares, approximately 4×4 inches.
- Spoon a generous amount of the sausage and potato mixture onto the center of each pastry square.
- Fold the pastry over the filling to form a triangle or rectangle, and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
- Beat the egg and brush it over the tops of the hand pies for a golden finish.
- Bake for 20-25 minutes, or until the hand pies are golden brown and puffed up.
- Let cool for a few minutes before serving.
Notes
- For extra flavor, you can add some hot sauce to the potato mixture.
- If you don’t have puff pastry, you can use pie crust dough instead.
- These hand pies freeze well—store them in an airtight container for up to 3 months and reheat in the oven.
