Description

Cajun Potato and Cheddar Sausage Hand Pies are flaky, savory pastries filled with a flavorful mix of seasoned potatoes, cheddar cheese, and Cajun sausage, perfect for a handheld snack or meal.


Ingredients

  • 1 lb Cajun sausage, crumbled
  • 2 medium potatoes, peeled and diced
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large skillet, cook the crumbled Cajun sausage over medium heat until browned and cooked through. Remove from heat and set aside.
  3. In a separate pot, boil the diced potatoes until tender, about 8-10 minutes. Drain and mash them with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  4. Stir the cooked sausage into the mashed potatoes, then fold in the shredded cheddar cheese and green onions until well combined.
  5. Roll out the puff pastry on a lightly floured surface and cut it into squares, approximately 4×4 inches.
  6. Spoon a generous amount of the sausage and potato mixture onto the center of each pastry square.
  7. Fold the pastry over the filling to form a triangle or rectangle, and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
  8. Beat the egg and brush it over the tops of the hand pies for a golden finish.
  9. Bake for 20-25 minutes, or until the hand pies are golden brown and puffed up.
  10. Let cool for a few minutes before serving.

Notes

  • For extra flavor, you can add some hot sauce to the potato mixture.
  • If you don’t have puff pastry, you can use pie crust dough instead.
  • These hand pies freeze well—store them in an airtight container for up to 3 months and reheat in the oven.
