Description

Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 tbsp Cajun seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream (optional for creamier gravy)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)

Instructions

  1. Season the chicken on both sides with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until browned and cooked through, about 6–7 minutes per side. Remove and set aside.
  3. In the same skillet, melt the butter. Add onions and cook until soft, about 3 minutes. Stir in garlic and cook for another 30 seconds.
  4. Sprinkle in the flour and cook, stirring constantly, for 1–2 minutes until golden brown.
  5. Gradually whisk in the chicken broth, scraping up the browned bits. Add paprika and cayenne (if using), and bring to a simmer.
  6. Reduce heat and stir in the heavy cream (if using). Let the gravy thicken for 5–7 minutes.
  7. Return the chicken to the skillet, spoon gravy over the top, and simmer for 5 minutes to blend flavors.
  8. Serve hot over rice, mashed potatoes, or biscuits.

Notes

  • Use homemade Cajun seasoning for better flavor control.
  • Chicken thighs add more flavor and stay juicier than breasts.
  • Skip the cream for a more traditional brown gravy.
