- 4 boneless, skinless chicken thighs (or breasts)
- 2 tbsp Cajun seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream (optional for creamier gravy)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/4 tsp cayenne pepper (optional for extra heat)
Instructions
- Season the chicken on both sides with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken until browned and cooked through, about 6–7 minutes per side. Remove and set aside.
- In the same skillet, melt the butter. Add onions and cook until soft, about 3 minutes. Stir in garlic and cook for another 30 seconds.
- Sprinkle in the flour and cook, stirring constantly, for 1–2 minutes until golden brown.
- Gradually whisk in the chicken broth, scraping up the browned bits. Add paprika and cayenne (if using), and bring to a simmer.
- Reduce heat and stir in the heavy cream (if using). Let the gravy thicken for 5–7 minutes.
- Return the chicken to the skillet, spoon gravy over the top, and simmer for 5 minutes to blend flavors.
- Serve hot over rice, mashed potatoes, or biscuits.
Notes
- Use homemade Cajun seasoning for better flavor control.
- Chicken thighs add more flavor and stay juicier than breasts.
- Skip the cream for a more traditional brown gravy.
