Description

A bold and comforting Cajun-style chicken chili packed with tender chicken, hearty beans, sweet corn, and smoky spices, all simmered together in one pot for a deeply flavorful and satisfying meal.

  • 1 ½ pounds boneless, skinless chicken thighs, cut into bite sized pieces
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes with juices
  • 1 cup sweet corn kernels, fresh or frozen
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt, adjust to taste
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large heavy pot over medium heat.
  2. Add diced onion and bell peppers, cook for 4 to 5 minutes until softened.
  3. Stir in minced garlic, Cajun seasoning, ground cumin, and smoked paprika, cook for 1 minute until fragrant.
  4. Add chicken pieces and cook for about 5 minutes, stirring until lightly browned on the outside.
  5. Stir in tomato paste, diced tomatoes with juices, kidney beans, black beans, corn, and chicken broth. Mix well.
  6. Bring to a gentle boil, then reduce heat and simmer uncovered for 25 minutes, stirring occasionally, until thickened and chicken is cooked through.
  7. Taste and adjust salt and black pepper as needed.
  8. Stir in chopped fresh parsley before serving.
  9. Ladle into bowls and serve hot.

Notes

  • For deeper flavor, let the chili rest for 10 minutes before serving.
  • If you prefer milder heat, reduce the Cajun seasoning slightly.
  • If the chili becomes too thick, add a small splash of chicken broth while reheating.
