- 1 ½ pounds boneless, skinless chicken thighs, cut into bite sized pieces
- 1 can (15 ounces) red kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes with juices
- 1 cup sweet corn kernels, fresh or frozen
- 1 medium green bell pepper, diced
- 1 medium red bell pepper, diced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 cups chicken broth
- 1 tablespoon olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt, adjust to taste
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large heavy pot over medium heat.
- Add diced onion and bell peppers, cook for 4 to 5 minutes until softened.
- Stir in minced garlic, Cajun seasoning, ground cumin, and smoked paprika, cook for 1 minute until fragrant.
- Add chicken pieces and cook for about 5 minutes, stirring until lightly browned on the outside.
- Stir in tomato paste, diced tomatoes with juices, kidney beans, black beans, corn, and chicken broth. Mix well.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 25 minutes, stirring occasionally, until thickened and chicken is cooked through.
- Taste and adjust salt and black pepper as needed.
- Stir in chopped fresh parsley before serving.
- Ladle into bowls and serve hot.
Notes
- For deeper flavor, let the chili rest for 10 minutes before serving.
- If you prefer milder heat, reduce the Cajun seasoning slightly.
- If the chili becomes too thick, add a small splash of chicken broth while reheating.
- This chili tastes even better the next day as the flavors continue to develop.
