- 4 boneless, skinless chicken thighs
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 ½ cups all-purpose flour
- ½ cup cornstarch
- Oil for frying (enough to fill 1–2 inches in skillet)
- 4 large romaine lettuce leaves
- ½ cup Caesar dressing
- 4 brioche buns
- ¼ cup shaved Parmesan cheese
Instructions
- Heat a deep skillet or Dutch oven with oil to 350°F. Set a wire rack over a baking sheet.
- In a bowl, whisk buttermilk, garlic powder, paprika, salt, and pepper. Add chicken thighs and marinate at least 30 minutes, or up to overnight.
- In another bowl, combine flour and cornstarch with a pinch of salt and pepper.
- Remove chicken from marinade and dredge each piece in the flour mixture. For extra crunch, dip back into buttermilk, then re-dredge.
- Fry chicken for 6–8 minutes, flipping halfway, until golden and cooked through (165°F internal temp). Drain on a wire rack.
- Lightly toast brioche buns. Spread Caesar dressing on both sides. Add lettuce, fried chicken, more dressing, and Parmesan shavings.
- Stack, serve, and enjoy hot!

- Double-dip the chicken for an ultra-crispy crust.
- Let the chicken rest 10 minutes post-fry to retain crunch.
