- 1 cup all-purpose flour
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup butterscotch chips
- 1 cup mini pretzels, roughly chopped
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs and vanilla, mixing until fully combined.
- Stir in flour, baking powder, and salt until just incorporated. Gently fold in butterscotch chips and most of the chopped pretzels, saving some for topping.
- Pour the batter into the prepared pan and smooth the top. Press remaining pretzels lightly into the surface.
- Bake for 25–28 minutes, until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Let cool completely in the pan before lifting out and cutting into squares.
- Serve and enjoy as-is or warm with ice cream for an extra treat.
