Description

  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butterscotch chips
  • 1 cup mini pretzels, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs and vanilla, mixing until fully combined.
  3. Stir in flour, baking powder, and salt until just incorporated. Gently fold in butterscotch chips and most of the chopped pretzels, saving some for topping.
  4. Pour the batter into the prepared pan and smooth the top. Press remaining pretzels lightly into the surface.
  5. Bake for 25–28 minutes, until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  6. Let cool completely in the pan before lifting out and cutting into squares.
  7. Serve and enjoy as-is or warm with ice cream for an extra treat.
