- 3 cups freshly popped popcorn (lightly salted, no butter)
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add in eggs and vanilla extract, beating until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Gently fold in the popcorn and white chocolate chips without crushing the popcorn too much.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes until the edges are golden and centers are slightly soft.
- Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
- Optional: Sprinkle with a tiny pinch of flaky sea salt before baking for added contrast.
