Description
Buffalo White Bean Tacos are a spicy, creamy vegetarian twist on classic buffalo flavors, featuring white beans tossed in hot sauce and served with cheese, sour cream, and fresh cilantro in warm tortillas.

- 4 flour tortillas
- 1 tbsp olive oil
- 1 small red onion, diced
- 2 garlic cloves, minced
- 1 small red pepper, diced
- 1 x 400g canned white beans, drained and rinsed
- 90ml buffalo hot sauce
- 100g sour cream
- 1 tsp smoked paprika
- 0.5 tsp cayenne pepper
- 0.5 tsp dried oregano
- 0.5 tsp cumin
- Salt and pepper to taste
- 150g shredded cheddar and mozzarella cheese
- 10g cilantro, finely chopped
Instructions
- Heat olive oil in a skillet over medium heat. Add diced red onion and cook until softened, about 3-4 minutes.
- Add minced garlic and diced red pepper, cooking for another 2 minutes until fragrant.
- Stir in drained white beans, buffalo hot sauce, smoked paprika, cayenne, oregano, cumin, salt, and pepper. Cook for 3-4 minutes until beans are heated through and well coated.
- Warm the flour tortillas in a dry skillet or microwave.
- Assemble the tacos by spooning the buffalo bean mixture onto each tortilla.
- Top with shredded cheddar and mozzarella cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.
- Serve immediately and enjoy!
Notes
- For extra spice, add more buffalo sauce or cayenne pepper to taste.
- You can use corn tortillas instead of flour tortillas for a gluten-free option.
- Optional toppings: avocado slices or pickled jalapeños.
