Ingredients
Scale
- 2 cups cooked chicken breast, shredded
- 1/2 cup buffalo sauce
- 4 oz cream cheese, softened
- 1 cup cheddar cheese, shredded
- 2 large onions, sliced into thick rings
- 1 cup all-purpose flour
- 2 eggs, beaten
- 2 cups panko breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat your fryer or a large pot of oil to 350°F (175°C).
- In a bowl, combine shredded chicken, buffalo sauce, cream cheese, and cheddar cheese.
- Arrange onion slices into ring pairs and fill the gap between them with the chicken mixture. Press gently to compact.
- Dredge each filled ring in flour, then dip into the beaten eggs, and coat with panko breadcrumbs. Repeat egg and breadcrumb step for extra crunch.
- Fry the rings in hot oil for about 3–4 minutes per side until golden brown. Work in batches to avoid overcrowding.
- Drain on paper towels and sprinkle with a pinch of salt or chopped parsley if desired.
- Serve hot with ranch, blue cheese dressing, or extra buffalo sauce.
Notes
- Freeze assembled rings for 20 minutes before breading to help them hold shape.
- Add garlic powder or smoked paprika to flour for extra flavor.
- Bake instead of frying at 425°F for a lighter version.
