- 1 box brownie mix (for 8x8 pan size), plus ingredients on box (usually eggs, oil, and water)
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- Pinch of salt
Instructions
- Preheat oven to 325°F (163°C). Line a 9-inch springform pan or 8×8 baking pan with parchment paper.
- Prepare brownie batter according to package instructions. Pour into prepared pan and spread evenly. Bake for 20 minutes and remove from oven (it will not be fully set).
- While brownie base bakes, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla, sour cream, and salt until just combined.
- Pour cheesecake mixture over the partially baked brownie layer and gently smooth the top.
- Return pan to oven and bake for another 35–40 minutes, or until the center is just set and edges are slightly golden.
- Turn off oven, crack door open, and let cheesecake cool inside for 30 minutes. Then chill in refrigerator for at least 4 hours before slicing.
