Description

These Brioche Dinner Rolls are soft, buttery, and slightly sweet, with a golden, tender crumb. Perfect for holiday dinners, special occasions, or anytime you want a bakery-quality roll at home.


Ingredients

  • 1/4 cup warm water
  • 1/4 cup warm milk (whole milk preferred)
  • 3 teaspoons active dry yeast
  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 4 eggs, at room temperature, separated
  • 3 tablespoons sugar
  • 1 1/2 sticks unsalted butter, at room temperature
  • 1 tablespoon vegetable oil

Instructions

  1. In a small bowl, combine warm water, warm milk, and yeast. Let sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, whisk together flour, salt, and sugar.
  3. Add 3 egg yolks and 1 whole egg to the yeast mixture, then pour into the flour mixture. Mix until a shaggy dough forms.
  4. Gradually add the softened butter, a tablespoon at a time, kneading until fully incorporated and dough is smooth and elastic (about 10 minutes).
  5. Place dough in a lightly oiled bowl, cover, and let rise for 1–2 hours, or until doubled in size.
  6. Punch down the dough and divide into equal portions (about 12–15 rolls). Shape into balls and place on a greased or parchment-lined baking sheet.
  7. Cover and let rise again for 45–60 minutes, until puffy.
  8. Preheat oven to 375°F (190°C). Beat the remaining egg yolk with 1 teaspoon water and brush over rolls.
  9. Bake for 18–22 minutes, or until golden brown and cooked through.
  10. Cool slightly before serving warm.

Notes

  • Ensure butter is softened but not melted for best incorporation.
  • If the dough feels sticky, resist adding extra flour; brioche dough is naturally rich and soft.
  • Brush with egg wash for a shiny, golden top.
  • These rolls freeze well—store in an airtight bag for up to 2 months.
