Description

A nourishing and flavorful breakfast bowl featuring fluffy quinoa, creamy avocado, soft-boiled eggs, and fresh vegetables — perfect for a healthy start to your day.


Ingredients

  • 1 cup cooked quinoa
  • 1 ripe avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 2 eggs, soft-boiled
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/2 lemon, juiced

Instructions

  1. Bring a small pot of water to a boil. Gently place eggs in and boil for 6.5 minutes. Transfer to ice water, peel, and slice.
  2. If needed, warm cooked quinoa in a pan with a splash of water or oil.
  3. Sauté spinach in a small skillet with a bit of olive oil until wilted, about 1–2 minutes.
  4. Slice avocado and halve cherry tomatoes.
  5. In a serving bowl, add warm quinoa as the base.
  6. Top with spinach, avocado, cherry tomatoes, and soft-boiled eggs.
  7. Drizzle with olive oil and lemon juice.
  8. Sprinkle with sesame seeds, salt, and pepper.
  9. Serve immediately and enjoy warm.

Notes

  • Use leftover quinoa to speed up prep.
  • Add chili flakes for extra heat.
  • Swap spinach with arugula or kale for a twist.
