- 1 cup cooked quinoa
- 1 ripe avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 2 eggs, soft-boiled
- 1 teaspoon sesame seeds
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 lemon, juiced
Instructions
- Bring a small pot of water to a boil. Gently place eggs in and boil for 6.5 minutes. Transfer to ice water, peel, and slice.
- If needed, warm cooked quinoa in a pan with a splash of water or oil.
- Sauté spinach in a small skillet with a bit of olive oil until wilted, about 1–2 minutes.
- Slice avocado and halve cherry tomatoes.
- In a serving bowl, add warm quinoa as the base.
- Top with spinach, avocado, cherry tomatoes, and soft-boiled eggs.
- Drizzle with olive oil and lemon juice.
- Sprinkle with sesame seeds, salt, and pepper.
- Serve immediately and enjoy warm.
Notes
- Use leftover quinoa to speed up prep.
- Add chili flakes for extra heat.
- Swap spinach with arugula or kale for a twist.
