Description

  • 6 bone-in skin-on chicken thighs (about 2 pounds total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken thighs evenly on both sides with salt and black pepper.
  2. Heat a large skillet over medium heat and add olive oil.
  3. Place the chicken thighs skin side down and cook for 6 to 7 minutes until golden and crisp. Flip and cook for another 5 minutes. Remove and set aside.
  4. In the same skillet, melt the butter and add the minced garlic. Cook for about 1 minute until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
  6. Stir in the heavy cream and bring to a gentle simmer.
  7. Return the chicken thighs to the skillet and simmer for 15 to 20 minutes, until fully cooked and the sauce thickens.
  8. Stir in the grated Parmesan cheese until melted and smooth.
  9. Spoon the sauce over the chicken, sprinkle with fresh parsley, and serve hot.
