Description

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup whole wheat flour
  • 1/2 cup fresh blueberries
  • Butter or oil for cooking

Instructions

  1. In a blender, combine the rolled oats and milk, and blend until smooth. Let it sit for 5 minutes to thicken.
  2. In a separate bowl, whisk the egg, honey (or maple syrup), and vanilla extract together.
  3. Add the egg mixture to the oat mixture and stir to combine.
  4. In another bowl, mix the baking powder, cinnamon, salt, and whole wheat flour. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  7. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on each side, until golden brown and cooked through.
  8. Serve warm with extra blueberries and maple syrup if desired.

Notes

  • For a smoother batter, you can blend the entire mixture.
  • If you don’t have whole wheat flour, all-purpose flour can be used instead.
  • These pancakes freeze well—store them in a zip-lock bag in the freezer and reheat in the toaster or microwave.
