Description
These soft and delicate lemon madeleines are elevated with beautiful swirls of blueberry and cherry fruit preserves. A delightful tea-time treat with a fruity twist and a citrusy zing.
Ingredients

- 2/3 cup granulated sugar
- Zest of 1 lemon
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted and cooled
- 1 tbsp lemon juice
- 2 tbsp blueberry preserves
- 2 tbsp cherry preserves
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
- In a bowl, rub lemon zest into sugar until fragrant. Add eggs and vanilla; beat until thick and pale, about 5 minutes.
- In a separate bowl, whisk flour, baking powder, and salt. Gently fold into egg mixture.
- Stir in melted butter and lemon juice until combined.
- Divide batter into prepared molds, filling about 3/4 full.
- Add a small dollop each of blueberry and cherry preserves on top of each madeleine. Use a toothpick to gently swirl.
- Bake for 10-12 minutes, or until edges are golden and centers spring back.
- Cool slightly, remove from pan, and dust with powdered sugar if desired.
Notes
- Don’t overmix the batter after adding flour to keep the texture light.
- Try raspberry or apricot preserves for variation.
- Madeleines are best enjoyed the day they’re baked.
