Description

These soft and delicate lemon madeleines are elevated with beautiful swirls of blueberry and cherry fruit preserves. A delightful tea-time treat with a fruity twist and a citrusy zing.


Ingredients

  • 2/3 cup granulated sugar
  • Zest of 1 lemon
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 tbsp lemon juice
  • 2 tbsp blueberry preserves
  • 2 tbsp cherry preserves
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
  2. In a bowl, rub lemon zest into sugar until fragrant. Add eggs and vanilla; beat until thick and pale, about 5 minutes.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gently fold into egg mixture.
  4. Stir in melted butter and lemon juice until combined.
  5. Divide batter into prepared molds, filling about 3/4 full.
  6. Add a small dollop each of blueberry and cherry preserves on top of each madeleine. Use a toothpick to gently swirl.
  7. Bake for 10-12 minutes, or until edges are golden and centers spring back.
  8. Cool slightly, remove from pan, and dust with powdered sugar if desired.

Notes

  • Don’t overmix the batter after adding flour to keep the texture light.
  • Try raspberry or apricot preserves for variation.
  • Madeleines are best enjoyed the day they’re baked.
