- 2 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 12 oz fettuccine pasta
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook fettuccine according to package instructions until al dente. Drain and set aside.
- Rub chicken breasts evenly with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side until blackened and cooked through. Remove from skillet and let rest.
- In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens slightly.
- Slice the cooked chicken into strips.
- Toss the cooked fettuccine in the Alfredo sauce until well coated.
- Serve pasta topped with sliced blackened chicken and garnish with chopped parsley.
